Hearty Shepherd's Pie

It has been years since having a good Shepherd's Pie. This is another recipe found in my Irish cookbook. Haven't tried this one yet, but it sounds like it would hit the spot.
Hearty Shepherd's Pie
1 1/2 pounds ground beef
2 cups french fried onions, divided
1 can (10 3/4 oz.) condensed tomato soup
2 tsp. Italian seasoning
1 pkg. (10 oz.) frozen mixed vegetables, thawed
3 cups hot mashed potatoes
Preheat oven to 375 degrees. Cook meat in oven-proof skillet until browned; drain. Stir in one cup fried onions, soup, 1/2 cup water, seasoning, and 1/4 tsp. each, salt and pepper.
Spoon vegetables over beef mixture. Top with mashed potatoes.
Bake 20 minutes or until hot. Sprinkle with remaining 1 cup onions. Bake 2 minutes or until golden brown.
