Hearty Shepherd's Pie

It has been years since having a good Shepherd's Pie. This is another recipe found in my Irish cookbook. Haven't tried this one yet, but it sounds like it would hit the spot.
Hearty Shepherd's Pie
1 1/2 pounds ground beef
2 cups french fried onions, divided
1 can (10 3/4 oz.) condensed tomato soup
2 tsp. Italian seasoning
1 pkg. (10 oz.) frozen mixed vegetables, thawed
3 cups hot mashed potatoes
Preheat oven to 375 degrees. Cook meat in oven-proof skillet until browned; drain. Stir in one cup fried onions, soup, 1/2 cup water, seasoning, and 1/4 tsp. each, salt and pepper.
Spoon vegetables over beef mixture. Top with mashed potatoes.
Bake 20 minutes or until hot. Sprinkle with remaining 1 cup onions. Bake 2 minutes or until golden brown.

St.Patrick's Day Craft and Recipe

The kids and I made this jar for my mother-in-law several years ago. Very cute! You will need:
Glass jar
Green glass pebbles
Glass glue
green glass paint
paintbrush (You can get glass paint in marker form)
Step 1:
Glue green pebbles in clusters of 3 to create shamrocks. Leave about 1 inch diagonally between each cluster. Let dry 30 minutes. I did one side at a time. After the first side dried I did the other side.
Step 2:
Use the glass paint to add the stems to the shamrocks. Let dry overnight.
Potato Skins
I am not sure why I do not make this more often. The family always loves it when I do. Once again, this is a simple one!
4 baked potatoes, quartered
1/4 cup sour cream
1 packet (1 oz) ranch dressing & seasoning packet
1 cup shredded cheddar cheese
sliced green onion and/or bacon pieces
Scoop potato out of skins; combine potatoes with sour cream and seasoning. Fill skins with mixture. Sprinkle with cheese. Bake at 375 degrees for 12 to 15 minutes or until cheese is melted. Garnish with green onions and/or bacon, if desired.
